The Great (Vegan, Fat Free, Gluten-Free) Pumpkin Bars

I made these for the studio today and am getting so many requests for the recipe, I thought I should post. Credit goes to LOVEmikana, our daily dish on everything local.

We fall for flavors of this season like pumpkin spice and everything nice, so when we wanted to find a nutritious recipe to fuel our fire, we looked no further than the great pumpkin. More than just a decorative Halloween piece or pie filling to be eaten once a year, this low fat, high fiber fruit is rich in antioxidants, vitamins, and minerals.

To bake this goodness into a healthy, high energy bar, simply harvest these ingredients, combine, cook and continue on your way. These bars are perfect to eat pre and post workouts.



3 cups old fashioned oats

1/2 cup shredded coconut

1/2 cup sunflower seeds

1/3 cup ground flax seed

1/2 cup sliced almonds

1/2 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/3 cup brown sugar

1 cup pumpkin puree

1/4 cup applesauce

1/2 cup honey

1 teaspoon vanilla extract

Extra: 1 cup cocoa nibs or chocolate chips


Directions: Preheat oven to 350. Spray a 9 X 13 pan with non-stick baking spray of your choice. Set aside. Mix all dry ingredients in one bowl and all wet ingredients in another bowl. Combine and press evenly into pan. Bake for 25-30 minutes. Let cool, cut into squares and enjoy!

Bulgar Salad with Garbanzo Beans and Roasted Red Peppers

You know the song; work, gym, errands, dinners and drinks and too many nights of getting home with no energy or, frankly, ingredients to start anything but pasta with butter and garlic, delicious but probably not the best bang for your body, if you are what you eat. Here's a recipe that's got everything for us busy people who want to feel good about what we put into our bodies, but don't always have the time to plan a healthy meal.  Plus you can play around with it - a lot.  Sometimes I omit the garbanzo beans, add a diced avo if I have one on hand and serve the salad next to a simple grilled chicken breast.  You can marinate the chicken in a little of the dressing before grilling on your grill pan or in your broiler.  Whatever is easier.  Sometimes I substitute the lemon juice for orange juice in the dressing and add pistachios or almonds before I toss.  So yum and power packed with ingredients that make you feel.... healthy :)

Bulgur Salad with Garbanzo Beans, Roasted Red Peppers and Spiced Cumin Dressing

Serves 4 as a main course.

1 1/2 cups fine-grain bulgur
3 cups boiling water
3 tablespoons fresh lemon juice
1 teaspoon honey
1 teaspoon ground cumin
1/4 to 1/2 teaspoon cayenne pepper
1/4 cup extra-virgin olive oil
1 can garbanzo beans, rinsed and drained
6 ounces drained jarred roasted red peppers, diced (about 1 cup)
1/2 cup quartered yellow cherry tomatoes
1 small red onion, finely chopped
1/4 cup minced fresh parsley or cilantro leaves
4 pita breads, warmed and cut into wedges

1. Place the bulgur in a large bowl. Add the boiling water and set aside, stirring occasionally, until the bulgur has softened, 15 to 20 minutes. Drain the bulgur, shaking the strainer and gently pressing out excess moisture. Return the bulgur to the bowl.

2. Meanwhile, whisk the lemon juice, honey, cumin, cayenne, and 1/2 teaspoon salt together in a small bowl. Whisk in the oil until the dressing is smooth.

3. Add the chickpeas, roasted peppers, tomatoes, red onion and parsley to the bowl with the drained bulgur and stir to combine. Drizzle the dressing over the bulgur mixture and toss to combine.

4. Line each individual plate with several lettuce leaves. Mound some bulgur salad over the lettuce and tuck some pita wedges into the salad at several places around the plate. Serve. Eat. Be Happy.
